Sauerkraut Surprise Cake
- 1/2 cup margarine
- 1 1/2 cups sugar
- 3 eggs
- 1 teaspoon vanilla
- 2 cups sifted flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup cocoa
- 1 cup water
- 8 ounce can sauerkraut (drained, rinsed, finely snipped)
- Preheat oven to 350 degrees.
- Cream margarine and sugar together.
- Beat in one egg at a time.
- Add vanilla.
- Sift together dry ingredients and add to sugar mixture, alternating with the water.
- Stir in sauerkraut.
- Pour into greased and floured 13″x9″ cake pan.
- Bake 35 to 40 minutes.
- Frost with Sour Cream Chocolate Frosting.
