Brien’s Favorite Pie
Lemon Meringue Pie
- 1 9 ” Pre-baked pie shell
- 1/2 cup flour
- 1 1/2 cups water or milk
- 1 tablespoon lemon rind
- 1 1/4 cups sugar
- 1/2 cup lemon juice
- 3 egg yolks
- 3 egg whites
- 6 tablespoons sugar
- Preheat oven to 350 degrees.
- Mix flour, sugar, and salt.
- Add water and egg yolks.
- Cook ten minutes over low heat in a saucepan, stirring.
- Remove from heat, add lemon juice and rind and cool.
- Fill cooked pie shell with mixture.
- Whip egg whites gradually adding sugar until stiff peaks form
- Spread on pie, covering entire surface.
- Bake 12 to 15 minutes until meringue is golden.
- Let cool at room temperature before serving.
