Potato Leek Soup
- 1 1/2 cups chopped leeks
- 1 1/2 cups diced potatoes
- 1 quart chicken broth
- salt and pepper
- 1 cup canned milk
Garnish
- Sour Cream
- Parsley or Green Onions
- Cook potatoes and leeks separately in broth until tender
- Mash Leeks (blend if desired)
- Coarsely mash potatoes with a masher
- Combine with milk and heat through
To Serve
- Pour in Bowls
- Add a dollop of Sour Cream
- Sprinkle with Parsley or Green Onions
