Fancy Egg Scramble
- 1 cup Canadian bacon (diced)
- 1/4 cup green onion (chopped)
- 3 tablespoons butter or margarine
- 12 eggs (beaten)
- 1 3 ounce can mushroom stems and pieces (drained)
- 1 recipe Cheese sauce (following)
- 4 teaspoons butter or margarine (melted)
- 2 1/4 cups soft bread crumbs ((about 3 slices))
- 1/8 teaspoon paprika
Cheese sauce
- 2 tablespoons butter or margarine
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups milk
- 1 cup shredded American cheese
- In a large skillet, cook bacon and onion in the butter or margarine until onion is tender but not brown
- Add eggs and scramble until just set
- Fold in mushrooms and cooked eggs into Cheese sauce (see below)
- Turn into a 12″x7″ baking dish
- Combine remaining melted butter, crumbs, and paprika; sprinkle over eggs
- Cover, chill until 30 minutes before serving
- Bake, uncovered in 350F oven for 30 to 45 minutes
To make Cheese sauce
- Melt butter
- blend in flour, salt and pepper
- Add milk and cook until bubbly.
- Stir in American cheese until melted.
