Porcupine Meatballs
- 1 pound ground beef
- 1 egg
- 1/4 cup long grain rice (uncooked)
- 2 tablespoons onion (chopped)
- 1 tablespoon parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon Worcestershire sauce
- 1 10 oz can tomato soup
- Combine all ingredients except 3/4 of tomato soup and Worcestershire and mix well.
- Shape into about 20 balls.
- Place in a skillet.
- Mix remaining soup, 1/2 cup water, and Worcestershire, and pour over meatballs.
- Bring to boil.
- Reduce to a simmer for 40 minutes, stirring frequently
