Joe’s Special from Sausalito
- 10 ounces frozen chopped spinach (thawed, (1 package))
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 pound ground beef
- 1 small onion (chopped)
- 1/2 teaspoon basil
- 1/4 teaspoon ground marjoram
- 1/4 teaspoon oregano
- 4 eggs
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Drain spinach.
- Heat oil and butter, brown meat.
- Add onion and cook until tender but not browned.
- Add spices and spinach.
- Cook until liquid evaporates.
- Beat eggs, add and cook until set.
